My grandfather was a farmer here in Florida back in the friggin 40s and 50s and when I was little he would go to the big lakes and freshwater canals that weren’t attached to the farm runoffs and he would set up trot and limb lines to catch soft shell turtles. He would fillet them and cook them up many different ways.  One time he fried them right there on the lake with a big wok he set right in the coals of the fire and added a little oil, sometimes butter, salt, pepper and he even had his own dry batter he would fry them in.  Other times he made a soft shell turtle soup.  One time he just grilled them up in big pieces. It tasted great.  Was the only time I ever had soft shell turtle.  Never had it again after he passed.

I don't think the egg's weird texture is because fertilization akin to balut, but because, unlike a poultry egg, turtle egg yolk will harden while the  white will always remain liquid...
