As a graphic designer it looks more like a matter of GT7 having a better color balance (The whites and blacks are more pure, the image has more contrast and it is more saturated) than ACC having objectively "better graphics". In fact a more muted style can be more realistic to what a raw camera captures, so it is more a matter of intention, and while I do prefer what GT is going for, I feel like that IS subjective ultimately

I saw a true hands down review from a iRacing player, that tried GT7 and he said they are actually very similar in physics. There are differences in the game like accessibility and sounds but other then that very similar physics wise. It was refreshing to see a true review instead of "this one is better this one does this better" kind of trolling review

If i have to be honest, i like more Assetto Corsa Competizione for the simulation. It makes you realise that racing is NOT easy and that you probably won’t be the lucky one and win it all (also they’re completely different games. One is more arcade and the other is a proper simulator). They’re both beautiful games tho

The "depth" is the contrast that the sun provides. In ACC you disabled the sun.

AC is a better sim, while GT7 is a better game, simple as that. As a game, AC isnt even in the same galaxy as GT7, it will get closer with updates, but not as of this moment. But as a simulator of real life physics, it is miles better than GT7.

GT7 scene taken at sunset with patrial clouds and that ACC one was taken on a couldy day, hence why the shadows are non-existent. If you're going to make bad comparisons, actually make an effort to control variables like weathet and lighting. 
GT7 looks better because they spend more time on that then they do the physics

Gt probably has better lighting, reflections, shadows but it looks gamey. Acc can often look quite real. Especially with reshade

Personally I am an AMS 2 nerd, AMS 2 with a Quest 3 and my new 5070 I am blown away on how good AMS 2 looks using the 5070, I got myself a next level HF8 yesterday, I recommend that if you love sim racing get the next level racing HF8, It does wonders to sim racing in VR, Even I thought it wouldn't be nothing much, I am blown away how next level has got the engine effects, Brilliant addition to any sim rig.....
