300g honeycomb beef tripe
1 medium carrot
100g fresh bean sprouts
Fresh herbs: Vietnamese coriander, culantro, mint
1 garlic clove, 1–2 chili peppers
Lemon juice or vinegar
Sugar, fish sauce, salt, pepper
Roasted sesame seeds for garnish
👨🍳 Step-by-step Instructions:
Step 1: Prepare the beef tripe
Rinse the beef tripe well with salt and lemon or vinegar to remove any odor.
Boil the tripe in hot water with some smashed ginger and green onion for about 10 minutes.
Once done, immediately place it in cold water to keep it crunchy.
Slice into thin strips.
Step 2: Prepare the vegetables
Carrot: peel and shred into thin strips.
Bean sprouts: wash clean and blanch briefly in boiling water, then drain.
Herbs: wash, dry, and finely chop.
Step 3: Make the dressing
In a small bowl, mix:
2 tablespoons of fish sauce
1.5 tablespoons of sugar
1 tablespoon of lemon juice or vinegar
Finely minced garlic and chili (adjust to taste)
Stir well until the sugar is completely dissolved.
Step 4: Mix the salad
In a large mixing bowl, combine the sliced tripe, shredded carrot, and bean sprouts.
Pour the dressing over the ingredients and mix well by hand or with chopsticks.
Add the chopped herbs and gently toss again.
Sprinkle roasted sesame seeds on top for extra aroma and flavor.
